Roselle (Hibiscus sabdariffa) is krachiap daeng in Thai, the crimson calyx that makes the tart ruby infusion drunk across the tropics. Erawadee sells the whole dried flowers, 50 g to a pack, and each flower can be re-infused up to five times. Cold-brewed overnight it turns a deep jewel red ‚ sweeten with honey, fructose or a spoonful of raisins.

How to Use

Hot: add 250 ml of hot water to 3 flowers and brew for 5–7 minutes. Cold: infuse 10 flowers in 1 litre of cold water for 2–3 hours. Sweeten with honey, fructose or a spoonful of raisins if you like. Not recommended if you have gastritis with high acidity or a stomach ulcer. Follow the directions on the package.
